Chinese citizens travelling to Turkey can apply for an e-Visa. The process is straightforward: pay the fee and you are done.

Notes from this attempt
This is only what I ran into. I do not know how common it is.
- I was on macOS. Chrome often froze and would not move to the next step. Safari was smooth
- On the arrival-date step, changing it to my real inbound flight date also froze. The e-Visa is valid for 180 days and would still cover the trip, so I left the date as January 5 and continued
Steps
- Step 1: Open the e-Visa site evisa.gov.tr/en/ and choose Apply
Select a Chinese ordinary passport.
- Step 2: Choose your arrival date in Turkey. I left mine unchanged. 180 days is enough
- Step 3: Enter your details, including passport, parents, and contact information
For Supporting Doc I selected none.
After the basic details
- Step 4: Check your email for the payment link
For two people the visa fees were US$120, plus other processing charges of 12 + 3.3
- Step 5: Pay, finish the application, and download the e-Visa. The whole process took three minutes
